The hardest part of this recipe is finding a good pizzelle iron. Try Ebay or Craigslist -- unless you’re a pizzelle warrior, you're not likely to use one enough to warrant a brand new one. Mine is a hand-me-down from my great-grandma, but it's relatively new, non-stick, and makes two at a time. If you have a different kind of iron, the timing may be different.

1 and 1/2 cups flour
1 tablespoon baking powder
1/2 cup sugar
3/4 cup silken tofu
2/3 cup vegetable oil
1/2 teaspoon anise extract
1 teaspoon vanilla
1 cup soy milk

- Combine dry ingredients.
- Blend in wet ingredients until you have something the consistency of a pancake batter.
- Grease the pizzelle iron before the first cookie only, then plug it in to heat it up.
- Drop a little more than a tablespoon of batter onto the iron and lower the top for two minutes, until slightly brown but not golden.
- Remove to a plate, and stack them flat to cool.
- Enjoy!
